- Sucrose is also known as table sugar and it is the most common dissacharide.
- Sucrose is composed of glucose and fructose molecule bonded together by α-(1,2)- glycosidic bond.
- This bond could be hydrolyzed by an enzyme called sucrase.
- Sucrose is a non-reducing sugar since it does not have a free keto or aldehyde group so it is referred as a non-reducing sugar.
- Moreover the anomeric carbon of sucrose is not free and it can not simply open up its structure to react with other molecules.
